4 medium onions, chopped
3 small garlic cloves
3 Tbsp salad oil
4 (29 oz) cans tomatoes
4 (6 oz) cans tomato paste
1 pound of mushrooms, sliced
1 cup chopped parsley
3 Tbsp salt
4 tsp oregano leaves
2 bay leaves

Directions:
Directions:
Heat oil in large kettle over medium heat; add onion and garlic and sauté until onions are limp. Discard garlic. Add remaining ingredients. Reduce heat to low, cover, and simmer 2 hours. Discard bay leaves. Makes 1 gallon and can be used for spaghetti, lasagna, rigatoni, etc.

Note: This recipe can be made 2 months in advance or early in the day that you use it. To freeze, ladle sauce into 1-pint (or other size) freezer containers, leaving at least 1-inch head space for expansion. Refrigerate until chilled, and then freeze.
