1½ pounds ground beef
1 cup tomato juice or tomato sauce
¾ cups Quaker Oats, quick or old fashioned, uncooked
1 egg, lightly beaten (or 2 egg whites)
¼ cup chopped onion
½ tsp salt, optional
¼ tsp pepper

Directions:
Directions:
Preheat oven to 350º. Combine all ingredients, mix lightly but thoroughly. Press firmly into ungreased 8X4X- inch loaf pan. Bake at 350º for about one hour. Let stand 5 minutes, draining off any juices, before slicing. Makes 8 servings.

For hamburgers: Omit egg and reduce tomato juice to ½ cup; form 8 patties and broil or panfry until done.

This great recipe is from the Quaker Oats Company. When I make it, I used to add a trick from Grandma Sybil Cox: make a small mixture of ketchup and light Karo syrup and brush across the top of the meatloaf, then lay 2 or 3 slices of bacon lengthwise on top of the sauce; bake as directed. Also, I like to mound my meatloaf in the pan just a little bit rather than making it totally flat. Delicious!
