48 slices bread
softened butter
4 cups finely chopped turkey or chicken
1 cup chopped ripe olives
1 cup finely chopped bell pepper
1 cup grated carrots
1 teaspoon salt
1/2 teaspoon pepper
1 cup mayonnaise

Mix ingredients well together. Butter bread and cut off crust. Cut each sandwich into 3 sections.
