1 Tbsp extra virgin olive oil
1 Tbsp butter, unsalted
2 cloves garlic, thinly sliced
1 5 oz pkg mixed winter greens (kale and/or chard)
1 tsp Kosher salt
17 oz frozen puff pastry (1 sheet thawed)
All-purpose flour
5 oz (3/4 cup) goat cheese, crumbled
1/2 cup parmesan cheese, grated
4 large eggs
1 cup heavy cream
1/4 tsp ground nutmeg
1/4 tsp freshly ground pepper

Directions:

Preheat oven to 425º

1. Chop mixed winter greens into 8 cups.

2. In large skillet, heat olive oil and butter over med heat. Add garlic, cook for 1 minute till softened. Add greens and 1/2 tsp salt, cook - stirring occasionally for 5-7 minutes until greens wilt and most of moisture evaporates.

3. Roll out puff pastry sheet on a lightly floured surface to fit a 9" pie plate. Gently ease dough into pie plate, trimming the edge and crimping if desired.

4. Scatter goat and parmesan cheese into crust, then top with sauteed greens.

5. Whisk eggs, heavy cream, nutmeg, salt and pepper in a medium bowl. Pour over greens.

Bake for 20 minutes until crust is golden brown, and the quiche is set.

Slice into wedges to serve.

Makes 8 Servings
