½ Cup Jasmine Rice
1 Cup Coconut Milk
¼ Cup Water
Pinch Salt & Pepper
Pinch Ga ram Masala
1 Tbsp Sugar
2 Sm Key Limes
2 Tbsp Oil of your choice
2 Tbsp Teriyaki Sauce
2 Tbsp Butter
1 Green Onion (only green part)
1 Dz Large Shrimp
2 Cups Butternut Squash (small cubes)

Directions:
Take Jasmine rice, water, salt, pepper, sugar and coconut milk and bring to a boil. Then lower heat to simmer for 14 minutes. While rice is cooking, take butternut squash and saute in a skillet till tender. Add oil to hot skillet, add squash, salt & pepper and the ga ram masala. Cook till tender. You can add a little water to steam the squash while cooking. When done put aside and peel your shrimp. Marinate them for 30 minutes with some s/p and juice of one key lime. Then take the squash and add it to the pan that has the rice and gently mix. Your shrimp has marinated, now you're ready to start. This moves rather quickly, take some oil add to a hot skillet. Once well heated put your shrimp so they sear on one side. Then turn to other side. Add the teriyaki sauce, juice of 1 key lime and butter. Saute quickly. To plate take half of the rice mixture and put in middle of plate then take half of the shrimp and place on top of rice. Add some green onions on top and you're ready to eat! Enjoy!!!!

This dish was an inspiration after trying some meals from "Blue Apron" that featured Jasmine Rice. Hope you enjoy as much as I did in making and eating it!!!!
