1 whole garlic bulb
1 tsp. + 1 tbsp. olive oil
1 3/4 cups uncooked orzo pasta
20 oz. chicken stock
3 oz. reduced fat cream cheese
8 oz. fresh spinach, chopped
1/4 cup shredded asiago cheese
1/4 cup 1%or fat-free milk
1 tsp. garlic-pepper seasoning blend
1/4 salt
2 tbsps. minced fresh parsley

Preheat oven to 425º. Remove papery outer skin from garlic bulb, but do not separate the cloves. Cut off he tip of the garlic bulb exposing the individual cloves. Place on sheet of foil and drizzle cloves with 1 tsp. of olive oil. Wrap in the foil and bake for 30-35 minutes or until the cloves are soft. Unwrap, cool and squeeze garlic from skins. In Dutch oven, heat remaining oil over medium heat. Add pasta and cook over medium-high heat 2-3 minutes until orzo is lightly browned. Add stock; bring to boil. Reduce heat; simmer covered 10-12 minutes or until pasta is tender and liquid is absorbed. Stir in cream cheese until melted. Add spinach, then asiago cheese, milk, seasoning blend, salt and roasted garlic. Cook and stir until spinach is wilted. Place in serving dish and sprinkle with parsley.
