Crust:
1 cup flour
1/2 cup packed brown sugar
1/3 tsp. salt
1/2 cup chopped walnuts
1/4 cup cold butter
1 tsp. vanilla

Filling:
2 pkgs.(8 oz. each) cream cheese, softened
3/4 cup sugar
1 tsp. vanilla
3 large eggs







Topping:
3 cups fresh rhubarb, chopped
1 cup sugar
1/4 tsp. cinnamon
1/4 cup water
1 T. cornstarch

Directions:
Directions:
Combine crust ingredients. Cut in butter and vanilla. Press into a 13 x 9 inch baking dish. Bake at 375º F for 10 to 15 minutes or until golden brown. Beat cream cheese until light and fluffy; beat in sugar and vanilla. Add eggs, one at a time, mixing well after each addition. Pour cheese mixture over baked crust. Bake for 15 to 20 minute or until set and edges are light brown. Set aside. In a saucepan, combine topping ingredients. Cook stirring constantly, until thickened and rhubarb is tender. Cool. Pour over cheese filling. Chill; serve with whipped cream. Refrigerate leftovers.
