1 cup chicken base
2 gallons cold water
9 cups coconut milk
2 quarts julienne carrots
1/2 cup brown sugar
1 quart diced tomatoes
2 cups diced red onion
4 tsp salt
1/2 cup olive oil blend
2 cups white onions
1/4 cup chopped garlic
1/4 cup chopped jalapenos
8 baked chopped chicken breasts
1 cup shredded mozzarella cheese
1 cup tortilla strips

Directions:
Directions:
Combine the first 8 ingredients, mix until combined. Boil for 30 minutes
Place the next 4 in a sauté pan, cook until onions are clear.
Add sautéd items to boiling ingredients.
Cook chicken and cut into small chunks, add to the soup
When serving place a small pinch of mozzarella cheese and tortilla strips on top.
