1 large onion, chopped
½ bell pepper, chopped
2 stalks celery, chopped
4-5 cloves of garlic, chopped
2 tbsp. Worcestershire sauce
1 can diced tomatoes
3 cups chicken stock
2 cups uncooked rice
1 large chicken breast
1 lb. andouille sausage, chopped
2 tbsp. parsley
1 ¼ tsp. salt
½ tsp. black pepper
½ tsp. oregano
¼ tsp. cayenne red pepper
¼ tsp. ground thyme
2 tbsp. vegetable oil (or bacon grease)

Cook chicken at 350 ºF for 20 minutes, then shred or chop and set aside. Add onion, bell pepper, and celery to a large stock pot and saute in oil for 5 minutes. Add tomatoes, garlic, parsley, sausage and chicken and simmer for 5 minutes with the lid on. Add Worcestershire sauce and all the spices and stir well. Add the stock and bring to a boil. Once at a boil, stir in the rice. Simmer for 30 minutes on the stove top with the lid on.
