3 boneless skinless chicken breasts
1 cup white or brown rice
2 cans cream of chicken soup
1 cup cheddar cheese - shredded
1 package rolled pastry dough
1 can mixed vegetables

Directions:
Directions:
Cook the rice in 1 cup of water and set aside. Cut the chicken into small pieces and brown it on the stove, then set aside. Peel and cube the potatoes and then boil them until tender. Mix the potatoes, chicken, rice, cheese, cream of chicken soup, and mixed vegetables in a large bowl. Line the bottom of a round or oval casserole dish with one of the pie crusts. Lay the other pie crust out flat and cut slits in the top. Pour the chicken mixture into the casserole dish and place the other pie crust on top, sealing the edges together. Bake at 375 º F for about 40-50 minutes.
