2 lbs. chicken breast
2 tbsp. olive oil
¼ cup butter
2 tbsp. lemon juice
½ cup flour

Directions:

Clean the chicken and cut it into small pieces. Pound the chicken flat using a plastic bag or plastic wrap and a meat tenderizer. Coat the chicken in Flour. Combine oil and butter in a pan on medium to high heat. When that is boiling, place the chicken in the pan and turn until it is browned on all sides. Use this oil and butter mixture about twice before refilling and using new. When you are done with the oil and butter mixture take all the chicken out and pour the lemon juice into the pan. Pour off this liquid to be used as a sauce.
