1 Tbl. Butter
2 heads of garlic
1 quart of cream
1 pound red/white/sweet potato
2 cups grated Parmigiano- Romano cheese
1 tsp salt
1 tsp pepper
2 Tbl chopped chives

Directions:
Directions:
Pre heat oven to 400º
Grease an 10 X 13 dish with the butter
In a sauce pan, bring the garlic and cream to a simmer.
Season with salt and pepper. Simmer the cream for 15 minutes, or until the cream has reduced by 1/4 and has slightly thickened.
Layer the potatoes and cheese up to 6 layers.
Strain the garlic from the cream and pour over the top. Cover the dish with foil
Bake for 30 minutes. Remove foil and cook for an additional 10 minutes.
Garnish with cheese
