4 soft shell crabs, cleaned
flour for dredging
cayenne pepper or Cajun seasoning
salt and pepper to taste
4 Tbs. butter, divided
2 Tbs. olive oil
1/4 c. slivered almonds
1/4 c. lemon juice

Directions:
Directions:
1. Dry crabs thoroughly with paper towels.

2. Combine flour and seasonings.

3. Heat 2 Tbs. butter and olive oil until sizzling.

4. Dredge crabs in flour mixture and shake well to get rid
of excess flour.

5. Place crabs, shell side down and top with weight
(a heavy saucepan or brick covered with aluminum foil
will do nicely) and cook for 3 minutes.

6. Turn crabs and repeat on other side.

7. Remove crabs from heat and add 2 Tbs. butter and 1/4 cup
slivered almonds to pan. Stir about 1 minute.

8. Add 1/4 cup lemon juice and stir about 30 seconds.

9. Pour sauce over crabs and serve immediately.
