2 cups flour
1/2 cup sugar
2 tsp. baking powder
1 tsp. salt
1/4 cup butter, softened
1 cup milk
1 large egg
4 cups fresh or frozen rhubarb, do not thaw
3 T. strawberry Jello mix



Struesel Topping:
3/4 cup sugar
1/2 cup flour
1/2 cup quick cooking oats
1/2 tsp. cinnamon
1/4 cup butter

Directions:
Directions:
In a large bowl, combine the first seven ingredients. Blend 1 minute at low speed; beat 2 minutes at medium speed. Spread into a greased 13 x 9 inch baking dish. Top batter with rhubarb; sprinkle with Jello mix. In small bowl, combine first 4 topping ingredients; cut in butter until crumbly. Sprinkle topping over rhubarb. Bake at 375ºF for 35 to 40 minutes or until toothpick inserted in several areas comes out clean. Serve warm or cooled with whipped cream. Works as a coffee cake for breakfast, too.
