Cake:
3 large eggs
2 cups sugar
1 cup oil
2 tsp. vanilla
2 cups flour
2-1/2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
4 cups Granny Smith apples, peeled and chopped
3/4 cup chopped walnuts or pecans





Butter Sauce:
3/4 cup sugar
3 T. flour
1 cup milk
2 T. butter
1 tsp. vanilla

Directions:
Directions:
Combine eggs, sugar, oil and vanilla; mix well. Combine dry ingredients; add to egg mixture and mix well. Batter will be stiff. Stir in apples and walnuts. Spread into a greased 13 x 9 inch baking pan. Bake at 350ºF for 45 to 50 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack. For sauce: Combine sugar, flour, milk and butter in a saucepan. Bring to a boil over medium heat; boil and stir or 2 minutes. Remove from heat; stir in vanilla. Cut cake into squares; top with warm butter sauce. Garnish with a walnut half, if desired. Note: Can substitute Butter Sauce with Cream Cheese Frosting.

Cream Cheese Frosting:
1 pkg. (8 oz.) cream cheese, softened
2 T. butter
1 tsp. vanilla
2-1/4 cups powdered sugar
Cream together cream cheese, butter and vanilla. Add powdered sugar and beat until smooth. Spread over cooled cake.
