11/2 lbs. Carrots, peeled and chopped (about 8 Large)
1 lb. Tart Apples, peeled and chopped ( about 3 Large)
1 Yellow Onion Large, peeled and chopped
2 c. Cream
11/2 c. Chicken stock unsalted
11/4 c. Apple cider
3 Thyme springs (fresh)
1 tsp. Sea Salt
1/2 tsp. Black Pepper
Garnishes:
4-tbsp. Sour cream Low-fat
4-tbsp. Apples diced

Directions:
Directions:
Bring all ingredients to a boil in a Dutch oven over medium-high heat, reduce heat to low, and simmer, stirring occasionally, 50 to 60 minutes or until carrots are tender. Remove from heat, and cool 15 minutes.

Remove thyme springs. Process soup, in batches, in a blender or food processor until smooth. (For thinner soup, stir in more stock. 1 tbsp. at a time.) Spoon into individual bowls, garnish and serve immediately.
