3 1/2 c. all-purpose flour
1/2 tsp. baking powder
rounded 1/2 tsp. salt
3 sticks (1 1/2 c.) unsalted butter
1 c. sugar
1 1/2 tsp. vanilla extract
1/2 tsp. almond extract
1 large egg, lightly beaten

Directions:

1. Preheat oven to 350º.
2. Sift together flour, baking powder and salt.
3. Beat together butter, sugar and extracts in a large bowl with an electric mixer
at moderately high speed until pale and fluffy, about 3 minutes.
4. Add eggs and beat well.
5. Add flour mixture and mix at low speed until just combined.
6. Divide dough into quarters. Put 1 piece into a cookie press fitted with desired plate.

cookies, spacing them about 3 inches apart. Form more cookies with remaining dough
in same manner.
7. Bake cookies in batches in middle of oven until edges are golden, 10-15 minutes.
8. Transfer with metal spatula to racks to cool.

Ma made these cookies every Christmas and she would decorate them with colored sugar, sprinkles and colored icing. She would send them to parties and always had a container of them on the counter for the holidays. She would make these on a baking day while listening to her collection of Reader's Digest Christmas albums - remember "Christmas in Killarney"? Good memories go with these cookies!
