1 (14 oz) pkg coconut

2/3 cup white sugar

6 tbsp all purpose flour

1/4 tsp salt

4 egg whites

1 tsp almond extract

whole candied cherries or natural almonds (optional)

Directions:
Directions:
Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites and almond extract until well blended.

Drop by teaspoonful onto greased and floured cookie sheets. Press one candied cherry or natural almond into the centre of each cookie if desired.

Bake 325º for 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets. Cool on wire racks.


FOR CHOCOLATE MACAROONS
Prepare above recipe as directed adding 2 squares melted Baker semisweet baking chocolate to coconut mixture.
