4 cups fresh or frozen rhubarb, chopped
1 cup water
2/3 cup sugar
1/4 tsp. salt
1 pkg. (6 oz.) strawberry Jello
1-1/2 cups cold water
1/4 cup lemon juice
2 cans (11 oz. each) mandarin oranges, drained
1 cup finely chopped celery

Directions:
Directions:
In a saucepan, combine rhubarb, 1 cup of water, sugar and salt; bring to a boil over medium heat. Boil for 1 to 2 minutes or until rhubarb is tender; remove from heat. Stir in Jello until dissolved. Stir in cold water and lemon juice. Chill until partially set. Fold in oranges and celery. Pour into a 6 cup mold or 8 inch square pan that has been coated with non stick cooking spray. Chill until set.
