5 eggs lightly beaten

1/2 cup vegetable oil

1/2 cup grated romano or Parmesan cheese

1/2 tsp salt

1 tsp ground Italian spices (Italian spice is dried oregano, basil and rosemary and use 1 tsp of this mixture)

3 cups thinly sliced zucchini

1/2 cup finely chopped onion

2 tbsp finely chopped parsley

2 tbsp finely chopped red bell pepper

1 tsp finely minced garlic

2 cups baking mix (Bisquick or homemade Bisquick)

Preheat Oven 350º and spray a 9 x 13 in. casserole dish with cooking spray.

Whisk together the eggs, oil, cheese, salt and spices. Add the zucchini, onion, parsley, bell pepper and garlic and toss to mix well. Add the baking mix and stir to combine until no dry mixture remains.

Spoon into the prepared casserole and smooth the top.

Bake approx. 30 minutes until top is golden brown and puffy

Cut into squares to serve while warm or at room temperature



NOTE; Perfect dish to serve for brunch, lunch with a salad or side dish at dinner. Works great for potlucks as it does not need to be piping hot to be enjoyed
