Muffins:
3 c. all purpose flour
2 c. sugar
3 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
1 ¼ c. vegetable oil
4 eggs beaten
2 10 oz. pkgs. frozen strawberries, thawed

Strawberry Butter:
1 stick butter, softened
1 10 oz. package frozen strawberries, thawed and completely drained
2 c. sifted powdered sugar (or as much as needed to be firm)

Directions:

Use small muffin tins – sprayed with Pam. Combine flour, sugar, cinnamon, soda and salt. Add oil and eggs. Beat until thoroughly mixed. Stir in strawberries, juice and all. Fill muffin tins ¾ full. Bake at 350º for 10 to 15 minutes. For butter, mix in mixer and pipe into rosettes on foil and freeze.
