2 cups water
1 tsp. grated lemon rind
3 T lemon juice
2 eggs
¾ cup sugar
½ cup flour
2 T butter
1 9" baked pie shell
Directions:
Directions:
Separate whites & yolks. Beat yolks in small bowl. Bring water to a boil. In a separate pot mix dry ingredients. Gradually add boiling water to dry ingredients, stirring constantly until mixture is thick & clear. Remove from heat and add a small amount of hot mixture to beaten yolks to temper. Add yolk mixture to the rest of the hot mixture. Put back on heat and cook for 1 minute. Take off heat and stir in lemon rind and juice into hot mixture. Pour into pie shell. Top with meringue icing.
