2 1/2 cps. sugar
3/4 cp. carnation milk
1 stick butter
1 Tbsp. vanilla
1/2 cp. sugar to caramelize

Directions:
Directions:
Combine sugar, milk and butter in heavy saucepan and heat on low until butter is melted and mixture blended and warm (not hot). Brown 1/2 cp. sugar in iron skillet on low heat, stirring constantly until melted and golden brown. Slowly pour caramelized sugar into milk mixture, stirring constantly while cooking on medium heat until it reaches soft ball stage (spoonful of hot caramel poured into bowl of cold water holds shape loosely). Remove from heat and stir in 1 Tbsp. vanilla. Continue to beat caramel until it thickens enough to spread over cake. Spread quickly, as it will thicken quickly as it cools. This is the best caramel icing ever!
