Tuscan Chicken Cakes:
3 c. chicken, chopped (1 cooked rotisserie chicken works well)
1 c. Italian bread crumbs, divided in half
¼ c mayo
¼ c basil pesto
1 egg
2 t. honey mustard
1/3 c roasted red pepper

Tomato-Basil Relish:
1 c. tomatoes (chopped)
3 T. sun-dried tomatoes
1 T basil pesto
2T balsamic oil/vinegar
2 T basil leaves

Directions:
Directions:
Mix all ingredients (using half of bread crumbs) and form into cakes. Coat with remaining bread crumbs. Heat 2 T olive oil in skillet and brown chicken cakes.
Top with the following: ½ c mayo, 2 T honey mustard, and Tomato Basil Relish (see above))
