8 trout filets (1/3-1/2 lb person)
2 eggs
½ c. milk
Salt
Few drops Tabasco
Flour or finely ground cracker crumbs

Directions:
Directions:
Preheat skillet with ½ c. butter and 2 T. olive oil. Dip filets in mixture of eggs, milk, salt and Tabasco and then in flour or cracker crumbs. Fry until golden brown, cooking a few at a time, placing on warm platter until ready to serve.
