Crust:
1 cup unsalted butter, softened
1/2 cup sugar
1 tsp. vanilla
Zest of 1 lemon
2 cups flour
1/2 tsp. salt

Filling:
7 large eggs
3-1/4 cups sugar
1 cup lemon juice
Zest of 2 lemons
1 cup flour
1 tsp. baking powder
1/2 tsp. salt

Directions:
Directions:
Crust: Cream together butter and sugar until light and fluffy, about 5 minutes. Add vanilla and lemon zest and beat additional 1 minute. Add the flour and salt and beat until just blended. Do not over mix. Press into bottom of 13 x 9 inch pan. Place in refrigerator for about 15 minutes until mostly firm. Bake at 350ºF for 15 minutes, till golden brown. Cool.

Filling: Cream eggs and sugar. Add lemon juice and zest; mix well. Whisk together flour, baking powder and salt. Slowly stir into egg mixture. Pour over crust. Bake an additional 35 to 45 minutes until set. Sprinkle with powdered sugar. Cool on wire rack. Cut into bars.
