Marinade

1 cup plain yogurt
1 tsp kosher salt
1 TBSP grated fresh ginger
1/2 tsp black pepper
3 cloves garlic finely minced
1 lb. boneless skinless chicken thighs, poked with a fork and cut into large bite sized chunks

Sauce

2 tsp olive oil
1 tsp garam masala
3 TBSP butter
2 tsp paprika
6 cloves garlic minced garlic
8 roma tomatoes diced
2 inch thumb fresh ginger minced
1 1/2 tsp kosher salt
2 serrano peppers, minced
1 to 2 cups water
2 TBSP tomato paste
1/2 cup heavy cream
oil for grilling

Mix together the ingredients for marinade. Add chicken and toss to coat. Marinate for at least 30 min. or up to overnight.

For sauce: Melt the butter and oil in a large skillet over medium heat. Then add the ginger, garlic and serranos and saute til lightly browned. Add the tomato paste and cook 3 min. Add garam masala and paprika and saute 1 min.

Add tomatoes, salt and 1 cup water. Bring to boil, then simmer until thickened, about 20 min. Add more water if too thick. Meanwhile, light grill, when hot brush with oil. Grill chicken until charred, 2 min. per side.

Use an emersion blender to process sauce until smooth, then bring back to boil, Add chicken and simmer for 10 min. Add cream and stir. Serve over rice.
