1 cup quick cooking oats
1 cup flour
2 T. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/8 tsp. nutmeg
1 tsp. vanilla
2 large eggs, lightly beaten
1-1/4 cups milk
1/4 cup vegetable oil
1 T. lemon juice

Directions:
Directions:
Combine lemon juice and milk; set aside for 5 minutes. Add oats and mix well. Set aside for 5 additional minutes. Combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt. Make a well in center. Combine egg, vanilla and oil; add to oat mixture. Pour oat mixture into well and stir until just moistened. Pour batter by 1/4 cupful onto hot griddle. Cook as you would any pancake. Serve with butter and your favorite syrup.
