Leaf lettuce
Chopped onion (if desired)

DRESSING:
4-6 slices of bacon
2 eggs
½ cup water
½ cup sugar
½ cup vinegar

Directions:
Directions:
1. Clean lettuce and place in a medium sized salad bowl.
2. Cut bacon into very small pieces and cook until crisp.
3. Pour off fat and set aside.
4. In a small bowl, beat eggs slightly. Add sugar, vinegar & water.
5. Pour into skillet and cook slowly over medium heat until slightly thickened, stirring constantly.
6. Add bacon fat and pour over lettuce. Toss and serve.

This is a favorite leaf lettuce salad of mine. The recipe came from Charlotte Beamer, mother of a good friend of mine, Judy Roempagel, many years ago.
