2 1/2 lb lean ground beef
2 cups milk
4 eggs
1 cup dry bread crumbs
1/2 cup butter
1 cup finely chopped onion
3 tsp salt
1/4 tsp ground nutmeg
1/4 tsp allspice and cardamon (optional)
4 Tbsp flour
3 cups beef stock or bouillon
3 cups half and half cream
salt and pepper to taste
1 tsp dill weed

Preheat oven to 325º, if using oven method.
1. Ground beef twice into a fine texture. Beat eggs slightly. Add milk and dry bread crumbs.

2. Cook onion in 2 Tbsp of butter until soft. Mix into bread crumb mixture. Add salt, nutmeg, allspice, cardamon and beef. Mix thoroughly till soft. Let chill 1 hour for flavors to blend.

3. Shape mixture into 1 inch balls. Brown slowly in remaining butter, turning balls carefully so that they will hold their shape. As balls are browned, arrange them into a large casserole or Dutch oven.

4. Use the pan drippings - add flour and stir in bouillon soup. Stir constantly until sauce comes to a boil and thickens.

5. Add cream, salt and pepper, and crushed dill weed - sauce should be thin. Strain over meat balls.

6. Bake in casserole dish - 325º for 30-40 minutes - or -Simmer over low heat in a Dutch oven.

Makes 60 meatballs, or enough for two 6-serving meals.
