1 pound cleaned Rock Cod or Snapper (cut into 2 or 3 pieces)
5 Tbsp slivered fresh ginger
3-5 Tbsp regular soy sauce
5 Tbsp slivered green onion
Sprigs of fresh cilantro
Canola Oil

1. Select a microwavable bowl that allows fish to lie flat. Brush bowl with oil.

2. Mix 1/2 of ginger, oil and soy sauce together. Thoroughly coat the fish outside/inside with mixture to ensure full flavor. Place fish into bowl. Cover bowl and edges tightly with saran wrap.

3. Microwave for 3 minutes. Carefully check results - If fish appears to be uncooked. Microwave for an additional minute. Remove fish from microwave, and carefully remove saran wrap.

4. In small sauce pan, heat 3 Tbsp canola oil to hot temperature. Sprinkle remaining soy sauce, ginger, green onion on fish. Pour hot oil over ginger, green onion and fish. The ginger and green onion will sizzle when oil is poured over fish.

5. Sprinkle with cilantro. Serve immediately.

Purchase fresh fish from a Chinese market. Have fish cleaned and tail removed. Removing head is optional for chinese dish presentation. Fish cooked using this microwave method will be similar in taste to steaming fish Chinese style. Enjoy!
