1 3-lb pkg. chicken wings
1 1/2 cup water
5 star anise
1 piece fresh ginger root (about 3/4" thick, crushed)
1/2 cup dark soy sauce
1/2 cup thin soy sauce
1 Tbsp white wine
1 cup brown sugar

1. Rinse and clean chicken wings thoroughly.

2. In a 2-quart saucepan - bring water to a boil, add anise and boil for 10 minutes. There should be at least 1 cup of liquid remaining.

3. Add all remaining ingredients into saucepan, except the chicken wings. Bring to a boil.

4. Add chicken wings, cover and cook for 10 minutes more. Turn off heat and leave covered in saucepan for 1 hour.

5. Remove chicken wings and serve.

Save remaining sauce in the refrigerator for future use. The sauce can be used for 6-7 different preparations of chicken.
