1/4 lb salted butter (1 cube)
1 1/2 cup sugar
10 cups puffed rice

1. Melt butter in a large deep pot over medium heat Add sugar stirring with a wooden spoon until the mixture becomes like molasses and runs off the spoon

2. Add puffed rice and mix thoroughly and rapidly.**

3. Pour into 9 1/2 inch x 12 inch pan

4. Press and flatten mixture with a spatula, metal spoon or rolling pin

5. Cut puffed rice in the pan into squares before it has a chance to cool

Store in airtight can or plastic bag

Okoshi is a Japanese puffed cereal snack. This recipe is from my friend in Honolulu, Hawaii.
Variations: 1/4 cup chopped macadamia nuts or peanuts can be added with the puffed rice mixture if desired.

** The trick is to mix QUICKLY. This recipe may be difficult to make the first time, but it is worth a second try, because it is so tasty.
