1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup old fashioned oats
1 cup sweetened coconut

Directions:
Directions:
Beat together shortening and sugars until blended. Add eggs and vanilla and beat well. Combine dry ingredients and gradually beat into sugar mixture. Stir in oats and coconut. Divide dough into 4 portions. Shape each into a 6 inch long roll. Wrap in wax paper. Freeze until firm. Unwrap and cut dough crosswise into 1/2 inch slices, reshaping as needed. Place 2 inches apart on ungreased baking sheet. Bake at 350ºF for 10 to 12 minutes or until golden brown. Cool 5 minutes on pan and remove to wire racks to cool.
