2 cans (10-3/4 oz.) cream of chicken soup
1/2 cup mayonnaise
2 T. lemon juice
2 cups cooked and cubed chicken
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1 cup shredded Monterey Jack cheese, divided
1-1/2 cups shredded Cheddar cheese, divided
10 oz. egg noodles, cooked and drained

Directions:
Directions:
Combine soup, mayonnaise and lemon juice. Stir in chicken, onion, peppers, half of Monterey Jack cheese, half of Cheddar cheese and noodles. Transfer to a greased 2 quart baking dish. Bake, covered, at 350ºF for 30 to 35 minutes. Sprinkle with remaining cheeses. Bake additional 10 minutes or until cheese is melted. Note: For a change, substitute cream of mushroom soup for cream of chicken and 1 pound thin spaghetti broken into 2 inch pieces for egg noodles. You can refrigerate up to 2 days prior to baking.
