2 8 1/2 oz. pkg. of Jiffy Cornbread mix
1 c. nonfat milk
1 c. low fat cottage cheese (small curd)
2 large eggs
1/2 c. shredded cheese (packed)

Directions:
Directions:
Pre heat oven to 400º
Grease muffin tin. Mix cornbread mix, milk, cottage cheese and eggs with mixer till well blended. Stir in the shredded cheese and let sit for 5 minutes. Fill muffin tin 3/4 full and bake till golden brown, approximately 30 minutes. If you use smaller tins only takes about 15 miuntes.

Mama usually use smaller muffin tins so they would be bite size. I have also added a small can of drained sweet corn and sometimes Mexican corn for a little kick.
