Crust:
1 cup graham cracker crumbs
2 T. sugar
3 T. butter, melted




Filling:
1 pkg, (8 oz.) cream cheese, softened
1/3 cup sugar
1-1/2 tsp. vanilla
2 tsp. lemon juice
1 large egg, lightly beaten
18 fresh raspberries or small strawberry halves

Directions:
Directions:
For crust, combine cracker crumbs, sugar and melted butter. Press gently into the bottom of 18 paper lined mini muffin cups. For filling, beat together cream cheese, sugar and vanilla until smooth. Add egg; beat on low speed just until combined. Spoon over crust. Bake at 350ºF for 12 to 14 minutes or until centers are set. Cool 10 minutes before removing from pan. Cool on wire rack completely. Refrigerate at least 1 hour. To serve, top each with a berry. Note: Can substitute vanilla wafer crumbs for graham cracker crumbs. No sugar required.
