2 medium yellow summer squash, diced
1 large zucchini, diced
1/2 lb. sliced mushrooms
1 cup chopped onion
2 T. olive oil
2 cups shredded Cheddar cheese
1 can (10-3/4 oz.) cream of mushroom soup
1/2 cup sour cream
1/2 tsp. salt
1 cup crushed butter flavored crackers
1 T. butter, melted

Directions:
Directions:
In a large skillet, sauté the squash, mushrooms and onion in oil until tender; drain. In a large bowl, combine vegetable mixture, cheese, soup, sour cream and salt. Transfer to a greased 11 x 7 inch baking dish. Combine cracker crumbs and melted butter. Sprinkle over casserole. Bake, uncovered, in 350ºF oven for 25 to 30 minutes until golden brown and bubbly.
