2 Tbsp olive Oil
1 lb sweet Italian Sausage, casing removed & crumbled
1/2 tsp dried red pepper flakes
1/2 cup diced onion
3 cloves garlic, minced
1 28 oz. can Italian plum tomatoes, drained, coarsely chopped
1 1/2 cup whipping cream
1/2 tsp salt
12 oz. bowtie pasta
3 Tbsp minced fresh parsley or basil
Freshly grated Parmesan cheese

Directions:

Heat oil in heavy skillet over medium heat.

1. Add sausage & pepper flakes. Cook until sausage is no longer pink, stirring frequently about 5 minutes.

2. Add onion & garlic and cook until onion is tender and sausage is light brown, about 7 minutes. Add tomatoes, cream & salt.

3. Simmer until mixture thickens lightly, about 4 minutes . **

4. Cook pasta in large pot of boiling salted water until “al dente”. Drain pasta.

5. Bring sauce to simmer. Add pasta and cook until pasta is heated through and sauce thickens, stirring occasionally, about 2 minutes.

6. Serve - Divide pasta among plates. Sprinkle with parsley or basil.

Serve parmesan cheese separately.

**Meal can be prepared 1 day ahead. Cover tightly & refrigerate if mixture is to be stored.
