1 lb. fresh ground pork
6-7 leaves, Napa cabbage, finely chopped
1 Tbsp light soy sauce
1 Tbsp sherry
1 Tbsp sesame oil
1/2 tsp. salt
2 Tbsp cornstarch
2 Tbsp water
3 Tbsp minced green onions
2 Tbsp minced fresh ginger
2 cloves garlic, minced

1 package "Potsticker" skins
(New Hong Kong Noodle brand)
(Gyoza skins will do in a pinch,
but are much smaller and thinner)

2 Tbsp Oil
1 cup water
light soy sauce
vinegar
chili oil

Directions:
Directions:

1. Mix all filling ingredients together thoroughly.

2. To fill, place 1 Tbsp filling in center of skin and make 3-4 pleats on one side of skin. Bring pleated side of skin to back side and pinch to seal.

3. Heat 2 Tbsp oil in a 10”-12” heavy skillet over medium high heat. When oil is hot, place potstickers in skillet so that they are touching one another. When potstickers’ bottoms are golden brown, pour 1 cup water into skillet and cover immediately.

4. Cook over low heat until most of liquid is absorbed (10 min. approx.)

Serve with dipping sauce of equal portions of light soy sauce, vinegar and chili oil (to taste).

Makes approximately 36 potstickers
