1/2 cup maple syrup
2 tsp vegetable oil
2 Tbsp honey
1 tsp vanilla
2 3/4 cups quick cook rolled oats
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup sliced almonds
1/4 cup sesame seeds
2 Tbsp flaxseeds

3/4 cup dried fruits
(raisins, blueberries, cranberries or cherries)

3/4 cup coconut flakes (optional)

Preheat oven to 275º


1. In large bowl, combine maple syrup, oil, honey and vanilla. Add oats, sunflower seeds, pumpkin seeds, almonds, sesame seeds, and flaxseeds. Mix well. Spread mixture evenly onto two baking sheets

2. Bake in oven for 1 hour. Stir mixture every 15 minutes.

3. Remove baking sheets from oven. While warm, mix in desired dried fruit and coconut flakes.

3. Let cool on a clean baking sheet.

Creates a big batch of lightly sweetened, crunchy granola. Great for storing some in a freezer for later consumption.

Granola is great to eat alone as a healthy snack or to sprinkle atop yogurt or ice cream. This healthy granola recipe is from my Canadian nutritionist friend. You can tailor the recipe by adding other favorite ingredients such as flax seeds or other nuts. Enjoy!
