¾ c egg whites
½ tsp cream of tartar
2 c sugar

sprinkles or crushed candy canes for garnish

Do not double recipe

Variations:
- coconut meringues (fold in 2 cups shredded coconut and ½ tsp vanilla)
- cherry meringues (fold in 1 cup finely chopped maraschino cherries)
- mocha meringues (add 2 tbsp instant coffee powder to the sugar)

Directions:
Directions:
Beat egg whites and cream of tartar with an electric mixer until peaks are formed.
Gradually add in the sugar, beating until stiff and shiny.

Drop by spoonful onto lined baking sheet. Top with sprinkles or crushed candy canes if desired.
Bake in a very slow oven (275ºF) until delicately browned (30 min).

yield: 5 dozen small meringues
