4 bunches collards (washed and chopped)
3 Tbsp. olive oil
1 onion chopped
2 garlic cloves
2 large smoked ham hocks
2 bay leaves
2 quarts chicken broth
¼ c. cider vinegar with 1 Tbsp. sugar
Red pepper (optional)

Directions:
Directions:
Sauté onion, garlic, ham hocks and bay leaves for 8 minutes. Add broth and all other ingredients and hard boil for 10 minutes. Then simmer for 45 minutes.

I don't use the red pepper. These are delicious and do not smell up you entire home. Best I've ever had.
