olive oil
1 lb butternut spiral noodles (In produce section)
1 onion, slivered
3 cloves garlic, peeled and chopped
1/2 c walnut halves
1 red pepper, slivered
8 oz portobello mushrooms cut into large chunks
1 c chopped kale
1/2 c chopped parsley
1 tsp dried basil
salt and pepper to taste

Directions:
Directions:
Coat bottom of large skillet with olive oil, add onions and garlic. Cook stirring occasionally until just translucent. Add Walnuts and cook until onions start to brown and walnuts are 'toasted'. Add red pepper and mushrooms, cook a couple of minutes. Add remaining ingredients including butternut spiral noodles, stir to coat (add olive oil if needed). Cover and simmer on low until noodles are crisp-tender. Season with salt and pepper to taste.
