1 lb. fresh spinach
4 hard-boiled eggs, chopped
6 slices cooked bacon, crumbled

Dressing:
1/2 C salad oil
2 T sugar
2 T wine vinegar
1 tsp grated onion
1/2 tsp salt
1/4 tsp dry mustard

Directions:
Directions:
Wash and drain spinach. Transfer to large bowl and chill.
In blender add oil, sugar, vinegar, onion, salt and mustard. Blend until thick.
Tear spinach. Add eggs and crumbled bacon. Pour dressing over salad. Let stand 1 hour. Toss salad and serve.
