1 package (18 1/2 -oz.) yellow cake mix
4 eggs, at room temperature
1/3 c. salad oil
1/2 c. water
1 1/3 c. mashed ripe bananas (4 medium)
1 package (3 3/4 ounces) instant vanilla pudding mix
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Preheat oven to 350 degrees. Grease and flour a 10-inch bundt pan or 10- inch tube pan.

Combine all ingredients in large bowl. Mix until blended then beat at medium speed for 4 minutes. Turn batter into prepared pan.

Bake for 1 hour or until cake tester inserted in center comes out clean. Cool in pan 10 minutes, then turn out onto rack and cool completely. If desired, dust with confectioners' sugar before serving.

Cut this out of a newspaper a long time ago. The recipe is brown with age but is easy to make and makes use of those ripe bananas we all have from time to time. Enjoy.
