1 box Jiffy Corn Bread Mix
1 cp Sour Cream
1 cp Sweet Cream Corn
1 Egg
1\3 cp Milk
1 lb Ground Beef
1 tsp Salt
1 tsp Black Pepper
1 tsp Cumin
1 tsp Chili Powder
1 tsp Minced Garlic
1 tsp Onion Powder
1 can Enchalada Sauce
1 small can cilantro
4 oz Shredded Cheddar

Directions:

1. Preheat oven to 400
2. Mix first five ingredients together in mixing bowl
3. Pour in cast iron skillet
4. Bake for 20 minutes
5. In mean Time brown ground beef over medium heat until almost all pink is gone
6. Drain fat from ground beef and return beef to pan
7. Add salt Black Pepper Cumin Chilli Powder Garlic Onion Powder
8. Mix well and Simmer over low heat
9. Once corn bread is done poke holes on top with a fork
10. Pour Enchalada Sauce over Corn Bread
11. Then meat mixture, then cheese
12. Cover with aluminum foil and bake for 20 minutes
13. Top with cilantro and serve
