1 (9 inch) butter pie crust
3 pears
1/3 cup butter, room temp
1 cup white sugar
3 large eggs, beaten
1/3 cup all-purpose flour
1 Tbsp vanilla extract (or 1 T almond extract)

Directions:
Directions:
Preheat the oven to 350º

1. Peel, core, cut pears into 1/4" slices. Squeeze 1 Tbsp lemon juice to prevent pears from oxidization (browning).
2. Lay pear slices evenly in a circle on the pie crust with the small ends toward the center.
3. In a medium bowl, mix the butter and sugar together until smooth.
4. Beat in eggs one at a time until light and fluffy.
5. Stir in flour and vanilla. Pour over the top of the pears.
6. Bake for 45-60 minutes at 350º, until pears are soft and custard is set in the center.

Cool completely before slicing and serving.
 

Single Butter Pie Crust

1 1/4 cup all-purpose flour
1/4 tsp salt
1/2 cup butter, chilled and diced
1/4 cup ice water

Directions:
Directions:
1. Sift flour and salt into a bowl. Cut in butter until flour mixture looks like course meal or crumbs.
2. Stir in chilled water, a Tbsp at a time, until dough becomes a ball.
3. Wrap in plastic and refrigerate for at least 3 hours; overnight is fine.
4. Roll dough out to line a 9 inch pie plate or 10 inch tart pan.
5. Place crust in pie plate or tart pan. Press the dough evenly into the bottom and up the sides. Flute edges.
