2 boneless chick breast halves with skin on
slat, pepper, flour for dredging
3-4 Tablespoons of clarified butter
2 tablespoons mince shallots
1 1/2 cups quartered fresh mushrooms
2 tablespoons Jack Daniels bourbon
6 tablespoon Madera wine
1 cup whipping cream
2 tsp. chopped fresh parsley

Directions:
Directions:
Season chicken breast and brown in oil in medium high heat. Saute chicken until lightly browned on both sides. Add shallots and mushrooms and saute 1 minute.
Add bourbon and wine. Very carefully ignite. when flame subside, add cream and boil reducing by half. Season with salt and pepper; whisk in butter and remove from heat (be sure chicken is cooked through).
Place chicken breasts on plate, garnish with parsley.

Clarify butter: skim off fat on slightly cooled melted butter
