1 tsp. olive oil
1/2 cup finely chopped onion
1/2 tsp. minced garlic
1 1/4 cups shredded zucchini
/4 tsp. oregano
1/8 tsp. each: salt and pepper
4 (8 inch diameter) fat-free flour tortillas
1/2 cup(2 oz.) mozzarella cheese
1/2 cup diced tomatoes
1/4 cup pitted kalamato olives
1/4 cup, or more, of crumbled feta cheese

Directions:
Directions:
Saute onion and garlic for 1 minute
Add zucchini and cook for another 2 minutes
Add spices, continue cooking and then set aside
Wipe pan and spray with Pam
Put tortilla in pan: layer on cheese and zucchini mixture, tomato, olives ,feta cheese; put another tortilla on top
Cook 3 minutes; tortilla browned on bottom
Turn and cook 2 minutes on the other side
Serve with guacomole
